Recipe: Kumara Mac & Cheese


1 1kg packet of macaroni elbows
2 kumara
4 cups of milk
4 tablespoons flour
2 small cloves of garlic
2 1/2 cups tasty cheese, grated
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup frozen peas
2 teaspoons olive oil


1. Turn oven on to 250 degrees 
2. Fill large saucepan of water and boil
3. Add macaroni elbows, cooking until they are almost cooked - do not overcook
4. Peel kumera and boil until tender
5. Place milk in saucepan on stove and warm
6. Scrape soft kumara from skin and place in milk
7. Mix together with electric beater and return to stove
8. Add grated 2 cups of grated cheese, flour, salt, pepper and peas to the mixture
9. Gently heat, stirring constantly
10.When cheese has completely melted, pour into oven tray
11. Use the last 1/2 cup of cheese to sprinkle on top of the macaroni bake
12. Sprinkle breadcrumbs on top of the bake
12. Bake for 30 minutes, or until the bake is lightly browned
